Yummy ginger kisses and homemade Raspberry Jam



 After eating a packet of store bought ginger kisses with my sister(well not quite a whole packet) I decided I must be able to make something that would closely resemble them...after a little search on the net I came up with this recipe and it really did work and what's    more everybody loved them so will share the recipe with you all....I also had a request from the master of the house to get on and make the   raspberry jam I had been promising to make...and got a right hurry along to deliver when I saw him in the supermarket with a jar of it!!!!How could he possibly buy Jam!

GINGER KISSES
125 grams  softened butter
1/4 cup plus 2 tsp sugar
1 egg
1.5 tsp ginger
1 tsp cinnamon
1 T golden syrup
75 grams flour plus 1 T cornflour
1/2 tsp baking powder
1/2 tsp baking soda
METHOD
Put the 1st 6 ingredients in a bowl and beat until smooth,Measure the dry ingredients and beat into the butter mixture until smooth. Place blobs about the size of 1/2 a walnut onto a well greased tray.Put into the oven at 220 C, turn down the heat 10 c as soon as you put them in. Bake for 5 mins or until they spring back when pressed. Watch carefully to  ensure they don't burn.
Mock Cream filling
100 grams butter
1 tsp vanilla
1 cup icing sugar
about 2 T water
Beat sugar butter and vanilla with 2 T until smooth. Add about 2T cold water gradually, while beating.Sandwich the kisses together...Yum Scrum
